Abstract

Of zinc is widely present in the body to life, the content is too low will cause a decline in the immune system of humans and animals, and affect the body's normal growth and development. Many data indicate that zinc deficiency in children in China are quite prominent, and my diet need to artificially add more than 1/3 of the amount of zinc. The inorganic zinc absorption rate is low and easy to stimulate the gastric mucosa many drawbacks so that people became interested in organic amino acid and carbohydrate complexed trace elements. Yeast rich in nutrients because of low manufacturing cost but also enriched in selenium, chromium, zinc and other trace elements caused greater widespread concern. In this study, UV mutagenesis induced by high concentrations of zinc forward get the excellent zinc-rich yeast HB524; Since then its zinc-rich culture process has been optimized on the basis of single factor experiment, preliminary study yeast zinc organic state detection and the Kunming mice fed experimental explore the biological function of the yeast zinc, to provide a reference for the production and quality evaluation of the zinc-rich yeast. The results showed that the zinc-rich capabilities HB524 on different media, low-sugar degree wort effect.
