Abstract

Test beer special fruit as test materials , analyze the content of major nutrients in beer special fruit fruit Extraction and Purification of beer special fruit polysaccharides , and beer special fruit polysaccharides extracted activity was measured , further rich beer special fruit theoretical knowledge . The main findings are as follows : 1 beer special fruit fruit contains a variety of nutrients , the fruit is rich in water ( 88.20% ) , crude fat (1.98 %) , crude fiber (1.82 %) and potassium ( K 790μg / g ) . 6.47% of the total sugar ( glucose ) , total acid ( malic acid ) 1.05% , higher than other pears class . Paper by water extraction and alcohol precipitation extract polysaccharide beer special fruit , by single factor test and orthogonal test , the extraction rate of polysaccharide evaluation study of the factors that affect the the polysaccharide extraction process of the beer special fruit . The result is as follows : when the carbon dosage 0.01g, time 10min, temperature 10 ℃ decolorization rate was 28.28% . Research beer special fruit polysaccharide activity , hydroxyl radical scavenging rate ; phenanthroline method and pyrogallol autoxidation method , determination of superoxide anion radical scavenging . The results show that : the the beer special fruit polysaccharides on hydroxyl radicals and superoxide anion radical scavenging effect , but the scavenging effect of the same . When the Polysaccharide for 4mg/ml , hydroxyl radical scavenging effect better ; while more than sugar for better 2mg/ml of superoxide anion radical scavenging .
