Proteins are the material basis of life, and no protein would be no life.It is the material closely linked to the life and activity of various forms of life. The basic unit of protein are amino acids. As one of the many bioactive macromolecules of the body, amino acid is building cells, the basic materials for repair organizations.Adrenaline is an important material of catecholamine neurotransmitters for the human and mammals. It controls the nerve system response to a series of biological and chemical processes. The research on molecular biological is to understand the interaction between biological systems and identify the specific role of the foundation. The study of the interaction between amino acid molecules and adrenaline are for the promotion of life sciences, pharmaceutical chemistry, physical chemistry. In this paper,we studied the influence of glycine, serine, glutamate, aspartic acid and phenylalanine on oxidation of epinephrine cyclic voltammetry(CV) curves with electrochem method, and focused on the electrochemical behaviour of epinephrine aroud isoelectric point of the phenylalanine. At the same time,we assisted in quantum chemistry methods to carry out the theoretical study of hydrogen bonding complexes formed between phenylalanine and adrenaline.First, cyclic voltammetry was used to study the effect of glycine, serine, glutamate, aspartic acid and phenylalanine on the electrochemical properties of adrenaline in the hydrochloric acid buffer solution. The results indicated that five amino acid had stabilization on adrenaline,so that the ability of oxidation of adrenaline decreased, which altered the cyclic voltammetric properties of adrenaline. The ability of the five amino acids affect adrenaline differently for theirs structures different. It showed that the five amino acid had different stabilization in different system to adrenalin.Secondly,we had studied the phenylalanine emphatically around the isoelectric point the influence on the adrenalin oxidation behavior using the cyclic voltammetry using different pH, the solution of different composition and platinum electrode, glassy carbon electrode. It indicated that in the system of hydrochloric acid in different pH,hydrochloric acid-sodium chloride buffer solution,B.R,buffer solution and physiological media KRPB of pH=7.4,phenylalanine must have a stabilizing effect and inhibiton the oxidation of epinephrine up to a certain extent. With the increase of pH and concentrations of phenylalanine, epinephrine’s potential of oxidation peak is shifted forward and potential of reduction peak is shifted backward, the current of peak decreased. The characteristics of the cyclic voltammetry of epinephrine has changed in this way. Finally, phenylalanine and its anion are the main object of study. The hydrogen bonding complexes could be formed between adrenaline and them.We optimized their configurations using the DFT-B3LYP method of quantum chemistry. The geometries of adrenaline and the stable complexes were respectively optimized to obtain structural parameters and binding energies. The calculation results could be used to explain some experimental phenomena better. The 1:1 hydrogen-bonded complexes of the Phe-Ep is nine in gas phase and five in solution phase. The formation of hydrogen bonds plays a protective effect on the hydroxy-adrenergic.It makes the adjacent hydroxyl(-OH) of the benzene ring remove H difficultly, reduces the energy system, increases the stability of epinephrine, inhibits the oxidation of the adrenergic to a certain extent and explains the phenomenon of the experiment combining structural parameters and energy.
