Drought stress, carrots quality change the proportion of the central pillar, soluble solids, cellulose and hemicellulose content increases with the strengthening of its drought stress, B-carotene and vitamin C content showed decline, edible the decline in value. Different drought stress under carrots malondialdeyde content with stress time performance decrease - increase - decrease trend, indicating that the membrane integrity destruction. Osmotic adjustment substances (soluble sugar, soluble protein, proline content), and antioxidant enzymes (SOD, POD, APX) activity gradually increased with stress time performance, when the soil moisture content of 65%, an increase of the most. Photosynthesis of more and more obvious that this change coincided with the chlorophyll content, chlorophyll content reduced photosynthetic rate decreases, reduced photosynthetic products.
