UV-visible absorption spectroscopy , fluorescence spectroscopy , conductance , negative staining electron microscopy , nuclear magnetic resonance methods such as the primary means of technology combined with pH measurements , determination of the phase diagram , a systematic study of ovalbumin (OVA) and an anionic surfactant sodium dodecyl sulfate (SDS), two cationic surfactant dodecyl trimethyl ammonium bromide (DTAB ) , cetyltrimethylammonium bromide (CTAB) , and they are formed of n the interaction between the anion mixed surfactant , the surfactant system of vitamin C (Vc) OVA interaction . Findings of the surfactant interaction OVA conductance and fluorescence probe method show that 0.05wt% OVA SDS critical micelle concentration (cmc) can be increased , OVA is not conducive to the the SDS monomer gathered to form micelles , SDS , SDS monomer with OVA role greater than between the SDS micelles with OVA and OVA mainly a combination of hydrophobic interaction between . Synchronous fluorescence results show that the OVA fluorescence by tryptophan (Trp) residues . SDS and OVA combination of points located at or close to the Trp residue , the state of aggregation of the SDS single molecule affecting a combination of SDS with OVA molecule surface hydrophobic group , thus affecting the fluorescent properties of the tyrosine (Tyr) residue , and Trp residues , SDS OVA molecule Tyr residues microenvironment polarity than Trp residues in which the polarity of the microenvironment . Under the combined effect of the electrostatic interaction and hydrophobic interaction , OVA DTAB cmc value . The DTAB micellar the OVA molecular configuration is not obvious . OVA makes CTAB the cmc increases , is not conducive to the generation of the CTAB micelles . CTAB micelles have little effect on the the OVA molecular configuration . CTAB is greater than the influence of the microenvironment polarity OVA molecule Tyr residues Trp residues in which the polarity of the microenvironment . Therefore, the difference of the electrostatic force between the surface - active agent with OVA molecules will result in the OVA configuration different and OVA molecule surface amino acid residues in which the micro-environment polarity difference .
