Effects of Phytosterol on Hyperlipidemia Rats Due to High-fat Diet in Plasma Lipid Level

The main purpose of this paper is to study the effects of phytosterols on regulating the lipid of dietary hyperlipidemia rats by vivo animal experiments, and whether phytosterols have the effects of lowing plasma cholesterol, improving lipid metabolism and preventing liver from damage. What’s more, the practical effects and value of phytosterols on food were investigated by adding it to high-fat diet gentiana.First of all, the effects of phytosterols on regulating the lipid of dietary hyperlipidemia rats were studied by adding different amount phytosterols to feed.The results suggested that total cholesterol (TC), triglyceride (TG), and non-high density lipoprotein cholesterol (non-HDL-C) levels decreased significantly in phytosterols (p<0.05or p<0.01), compared with the model group, while high-density lipoprotein cholesterol (HDL-C) was increased significantly (p<0.01). TC and TG levels in liver were significantly decreased compared with model group (p<0.01). By organ index analysis, the results indicated phytosterols may have caused lung swelling (p<0.05), but they had no effects on other organs. Meanwhile, the phytosterols could reduce fat weight of innards and increase fat content in excrement. The results of biochemical analysis showed that phytosterols can increase cholinesterase (CHE) activity (p<0.01). And the effects of lowing lipid were related to the adding dose of phytosterols.Secondly, by adding2.0%phytosterols in gentinan, the results suggested phytosterols can effectively prevent the occurrence of hyperlipidemia and reduce the risk of atherosclerosis. The TG levels were lowered significantly (p<0.01) and organ weight and body weight were decreased tremendously compared with normal group (p<0.01). Other results were in accordance with the high-fat diet groups.Thirdly, the results of nutrition fortification experiments showed that, adding casein in gentiana can make the mice grow normally.In summary, phytosterols had significant effects on lipid-lowering and especially reducing TC and non-HDL-C levels, increasing HDL-C levels, and reducing the ratherosclerosis risk. Added them to gentiana, phytosterols were used in high fat and high sugar foods, and adding casein in the gentiana can enhance their nutritional value. The lipid-lowering mechanisms of phytosterols such as inhibiting the accumulation of cholesterol in the liver, promoting the metabolism of cholesterol to excrete with excrement had proved. In addition, the study also found that phytosterols can inhibit lipid peroxidation and protect liver from demage.
