Abstract


In order to construct the texture of the ham standard reasonable compression ratio of the critical factors determining the textural properties of the ham, using the the mandatory definitions and indirectly reflect the texture characteristics develop suitable products texture of minced meat class sensory evaluation standard, and so Textural indicators for basic research instead of sensory score ham level to verify the feasibility of the application of the discrimination aspect, the the sensory score points corresponding to the reference sample texture value, to establish a standard range of hardness, brittleness and adhesion, through the establishment of the sensory score as independent variables, the texture value of the dependent variable linear regression equation to obtain flexibility, cohesiveness and chewiness standard range, and finally to the texture based on the value of the different brands of ham Fisher linear discriminant equation .
