Abstract

Red beet (Beta vulgaris var.rubra) originated in Europe, with its purple root eaten as a vegetable, is important in some countries in Europe and the Americas is one of the vegetables. Betaine beet roots in a very significant nitrogen-containing compound is a quaternary ammonium water-soluble alkaloids, can be used as efficiently replace methionine methyl donor activity, but also to maintain the stability of vitamins, promote fat metabolism, effective protection of the liver, is widely used in feed industry, pharmaceutical industry, food industry and the chemical industry. Through this paper, red beet juice medicinal efficacy studies, found to have anti-fatigue effect, and betaine is one of the main active ingredient. Research is divided into the following two aspects: 1. Orthogonal experiment method to extract systematic study conditions on the quality of red beet juice, red beet juice optimize the extraction process. The results show that the extraction temperature is too high and too long, red beet juice total soluble solids content did not increase, but will decrease; when the feed solution was an increase of 1:3, the total soluble solids content reaches the maximum not increase. Red beet juice extract optimum conditions: temperature 20 ℃, time of 4 min, solid-liquid ratio of 1:3 2. Establish exhaustive swimming mouse model system for optimum extraction conditions of red beet juice and Betaine red beet juice anti-fatigue effect in mice. Research red beet juice anti-fatigue effect, the male mice were randomly divided into four groups, namely red beet high dose group, middle dose group and low dose group and blank control group; research on red beet juice betaine anti-fatigue effects in mice when healthy male mice were randomly divided into five groups, namely, betaine high dose group, middle dose group and low dose group, red beet juice group and blank control group, intragastric administration of 30d measured after mice swimming time, serum urea nitrogen, blood lactic acid, glycogen, blood sugar levels and other indicators of change. The results showed that the red beet juice can enhance mice swimming endurance, reduce serum urea nitrogen, blood lactic acid content, increased liver glycogen, blood glucose levels in mice have some anti-fatigue effects, including high-dose group showed the best effect . Red beet juice in betaine has - given anti-fatigue effect, can enhance the mouse swimming endurance, lower serum urea nitrogen, blood lactic acid content, increased glycogen content, but its effect on blood sugar levels had no significant effect was Red Beet Juice fatigue of the active ingredients.
