Cost of alcohol is higher in China because of low fermentation level and high energy cost .Therefore, selecting a high-yield strain can resolves the problems.FY-002 is a strain with stable speciality , transformation ratio and fermentation time, however ,it is unsuitable for high gravity fermentation and its fermentation level is lower than advanced level based on internal reports.In order to improve the alcohol production, transformation ratio and single production unit of alcohol ,strain for producing alcohol is breeding by composite mutation (the ion implantation and UV) in this paper. Optimal process was obtained as follows: fulfilling ion implantation again and again, selecting TTC as screen medium、the activity of hexokinase and the content of Ergostreol as key item. A new way for the breeding of industrial microbes was offered. Yeast strain FY-258 is selected trough above methods.Growth characterization and fermentation rule is studied in this paper. Optimal conditions were obtained by single fact experiments of way supplying medium, temperature, oxide and production, then 500l fermentor is for pilot scale test.Results showed that:The performance of strain selected is superior and its property is stable. 13.2% of alcohol was accumulated in 500litres full automatic pot more than 11% compared with the orignal under the conditions of temperature 30℃、fermentation time 60h. 45.9% of the transfer rate was accumulated in 500litres fermentor more than 9.48% compared with the orignal. It was success to use ion implantation technology for selecting high yield yeast.
