Different aspects of breeding, production and processing of fish products , circulation and consumption extract samples for major risk factors that affect the quality and safety of fish products malachite green, chloramphenicol , polychlorinated biphenyls (PCBs) , oxytetracycline and nitrofuran the class metabolite , nitrite , benzo ( a ) pyrene , lead, arsenic, cadmium, histamine, peroxide value to carry out safety tests on the relevant aspects of the situation to carry out field research , analyze and summarize the problems , and then evaluation of the present situation of Hunan fish product safety and put forward constructive ideas . From the whole situation , the overall quality of fish products in our province is safe , but also more prominent in some aspects of the problem , mainly fish products in the breeding process water pollution of heavy metals such as lead, arsenic , cadmium , feed violations add malachite green , chloramphenicol and polychlorinated biphenyls (PCBs) and nitrite toxic and hazardous substances in the production process residues exceeding the flow of the sales process , due to health conditions do not meet the standard , the more serious secondary pollution . Based on these problems , the study proposes some suggestions , called on the various aspects of food safety supervision departments to intensify the comprehensive monitoring and remediation efforts to promote the safety of fish products in our province to a good level to ensure the safety of the people of the diet .
