Abstract

Quercetin, belonging to the group of common dietary flavonoid that occur ubiquitously in plant kingdom, has been shown to have biological activities such as antioxidant, antibacterial, anti-inflammatory, anti-mutagenic, antiviral, anti-allergic, antineoplastic, antithrombotic et al., The reaction between metal ions and quercetin has not been known too much. In this paper Quercetin-Cr(III) complex was synthesized and characterized, and its free radical ( ? OH、? O2- DPPH ?) scavenging activities , the binding to DNA and antibacterial of the complex were investigated. This thesis consists of six chapters:In the first chapter, a review was presented, in winch introduced the research orientation about Chinese Traditional Medicine, summarized the coordination chemistry in the Chinese Tradition Medical. The flavonoids complexes were briefly described. In the second chapter, by comparison of absorption spectra of quercetin in different medium, the influencing factors and possible mechanism of quercetin self-oxidation were investigated. The effects of self-oxidation of quercetin on its super anion free radical scavenging ability were also studied by the method of pyrogallol autoxidation. The results indicated that quercetin in alcohol was easy to undergo self-oxidation in pH > 8, and the self-oxidation would be enhanced by the increase of quercetin concentration, solution pH value and temperature; the Ca2+, Fe3+, Fe2+, Cu2+, Mg2+ enhanced the self-oxidation of quercetin, and lowered the super oxygen-anion free radical scavenging ability of quercetin; Mn2+, Al3+, Zn2+ inhibited the self-oxidation of quercetin , that Mn2+, Zn2+ increased the super oxygen-anion free radical scavenging
