Abstract


Oxidative polymerization of phenolic substances in the cider has an important impact on the stability of the sensory characteristics of cider and wine color, aroma and product quality. Six different apple varieties and 6 different types of cider, apples and cider 12 single phenol HPLC detection method, determination of twelve kinds of single phenol content, and more The phenol composition characteristics of the analysis. Found that epicatechin, chlorogenic acid and caffeic acid is the most abundant of the four apples and cider in single phenolic substances, account for a large proportion. Enzymatic oxidation under the conditions of the simulation the Cider system in four epicatechin, chlorogenic acid and caffeic acid single phenol oxidative polymerization experiments. Found that the degree of polymerization of chlorogenic acid and caffeic acid have a greater degree of increase over time, especially the increase in the degree of polymerization of chlorogenic acid solution 3 times. Astringent also increases with increasing degree of polymerization. Catechin and epicatechin only a slight increase in the degree of polymerization and astringent degree. Substrate in the process of enzymatic oxidation of chlorogenic acid and caffeic acid polymerization. Analog cider system in the non-enzymatic oxidation conditions, the polymerization reaction rate of the four single-phenol are relatively slow. The degree of polymerization of catechin and epicatechin increasing over time, and increased more than four times. Astringent is also increasing with increasing degree of polymerization. Basically not much change in the degree of polymerization of chlorogenic acid and caffeic acid and astringent. Non-enzymatic oxidation process, catechin and epicatechin phenolic compounds play a major role in the cider the late and aging process. The adoption LC-ESI/MS polymerization of catechin and chlorogenic acid oxidation products were measured and analyzed. The results showed that: in the enzymatic oxidation process, the oxidation product of the catechins in the presence of a small amount of dimers, confirmed the catechins in this process is a small amount of the polymerization reaction occurs. Chlorogenic acid is completely oxidized chlorogenic acid p-quinone that chlorogenic acid is first oxidized chlorogenic acid p-quinone, which can then polymerize. While in the non-enzymatic oxidation process, the oxidation product of the catechins determine the presence of dimer, or even a trimer, and the content is also more. Chlorogenic acid, only a small part is oxidized into the chlorogenic acid-p-quinone. Further confirmed by enzymatic oxidation of the non-enzymatic oxidation, substrate, product and during the reaction of the polymerization reaction differ.
