Abstract


Starch energy gum is an emerging movement of food, it's a huge potential for development, the broad consumer market, but domestic produce less, different product formulations and foreign markets, the price is more expensive. The paper in accordance with the special requirements of the sports food - easy to carry, easy to swallow, easy to digest, quick energy supply, long shelf life, such as corn starch digested for energy as an energy gum substances amylase hydrolyzate should have the properties, and in accordance with the characteristics of the energy gum its properties, structural analysis, determine the optimum energy plastic raw materials and formulations to prepare a good performance of the carbohydrate energy gum.
