Lactic acid bacteria extracellular polysaccharide is a sugar compound secreted outside the cell wall of lactic acid bacteria in the process of growth and metabolism. Many studies have shown that the anti-tumor immune regulation, and the role of lactic acid bacteria exopolysaccharides on the human body. The paper describes the background information on lactic acid bacteria exopolysaccharides, lactic acid bacteria exopolysaccharides chemical properties, physiological functions, applications and factors affecting its production are reviewed; based on yoghurt-producing bacteria - Bulgaria Lactobacillus EPS produced by the thermophilic Streptococcus lactis produces conditions, extraction and purification as well as immune activity research. First generation conditions of the extracellular polysaccharide in yoghurt production process and found that the use of a smaller inoculation amount 2% lower than the optimal growth temperature (42 ° C), i.e. cultured under conditions of 38 ℃ 2.5h, the end of fermentation low acidity, it is advantageous that the yogurt producing bacteria produce EPS. Juice on extracellular polysaccharide production, the results showed that the tomato juice and four kinds of juice is not only lactic acid bacteria growth-promoting substances, can also increase the production of extracellular polysaccharides. Extracted from yoghurt EPS, removal of protein in the process and the extraction process, the results showed that the enzymatically Sevag except protein 2 method works best. This method not only improve the extraction rate of polysaccharides and organic solvent savings. For further research yoghurt-producing bacteria produce EPS, respectively from Lactobacillus bulgaricus and Streptococcus agalactiae thermophilic MRS culture the exopolysaccharide was extracted, purified. C57 inbred mice, the immune activity of lactic acid bacteria exopolysaccharides experimental preliminary findings show that the yogurt in the EPS of the mouse thymus, spleen weight no significant impact. Phagocytic function and can activate mouse peritoneal macrophages and macrophage lysozyme activity; promote the generation of mouse serum hemolysin antibody, can improve the humoral immune function; enhanced mouse skin delayed-type hypersensitivity response, that can enhance the specificity of cellular immune function of the mice. The innovation of this study is extracted from the fermentation of yogurt in the EPS, and the extracted EPS immune activity research, provide direct experimental evidence for the yogurt with immune function. Yogurt producing bacteria of EPS production is increased by a method to improve the culture conditions, and based on this further development of lactic acid bacteria extracellular polysaccharide products, to be applied to drug production. Therefore, the issues are important to both the theory and practical application value.
