Functional rice because of its unique advantages as a staple food, can easily interfere with nutritional deficiency or metabolic diseases, but has a tantalizing prospect; resistant starch because of their enthusiasm in the prevention and treatment of cardiovascular disease, diabetes, gastrointestinal cancer effect, has been accepted as a new type of high-quality dietary fiber; leading to excess backlog of early indica rice and eating poor. Improve the eating 早籼米 or functionality, and prepared to become a high resistant starch content of the staple food, whether it is for the response to the current global food crisis, or high-fat low-fiber \problem is of great significance. In this study, the use of low-value indica rice as raw material, the use of freezing enhanced mass transfer, acetylation modification of whole rice starch, prepared RS4 content of rice and its Eating sexual evaluation: take the instrument analysis tools to explore RS4 formation mechanism; preliminary safety evaluation of toxicology tests, and system evaluation based on high RS4 functional rice II diabetes prevention. The estimated maximum effect dose greater than 50g/kg, is the safety of food. High RS4 content of rice may have the amino acid sparing effect, the increase in body weight of rats; experimental dose can be reduced TC (total cholesterol), TG (triglycerides) and BUN (blood urea nitrogen) levels, with kidney secretion nitrogen reduction burden protect the kidneys to regulate and improve the function of the lipid metabolism. 5, add high RS4 content of rice feed intervention type II diabetic model rats RS4 reduce postprandial blood glucose, to reduce Glycogenolysis, reduce hepatic glucose output, improve insulin sensitivity, Lipid Metabolism II diabetes can improve and glucose metabolism disorders. The histopathological observations indicate that the positive preventive role of the RS4 high sugar high fat diet-induced fatty liver.
