Abstract

As material living standards improve, people to meet the demand for food from the amount of steering a qualitative improvement, the pursuit of the green and health has become the consumer fashion. Many experts predict that people will pay more attention to self-care, and return to nature and the pursuit of healthy food consumption will become mainstream. Wild grapes for its natural pure, with a variety of therapeutic care, has medicinal, edible and commercial development value. The subject of wild Vitis (Vitis quinquangularis Rehd) nutrients are measured, the active ingredient - proanthocyanidins isolated and purified, and study the antimicrobial activity of proanthocyanidins. The main findings are as follows: measured conventional nutritional content of the moisture content of 68.02%, ash content of 2.13%, protein content of 0.86% and 2.60%, crude fat, crude fiber content of 6.90%, 10.57% of the reducing sugar content, titratable acid 0.62 g / L 100.8 mg/100g, vitamin C content of calcium content of 468.18 mg/100g, magnesium content of 75.67 mg/100g, potassium content 104.70mg/100g, iron content of 10.32 mg/100g, linoleic acid 42.70g/100g, linolenic acid 452.37g / the 100g, oleic acid the 2025.44g/100g, palmitic acid 705.23g/100g, histidine 711.6 mg/100g, threonine 496.9 mg/100g, valine 542.8 mg/100 g, methionine 60.9 mg/100g lysine 287.2 mg/100g, iso-leucine 272.0mg/100g, 76.6 mg/100g leucine, phenylalanine 216.2 mg/100g, the tryptophane 254.7 mg/100g. Taken in order to study the effect of proanthocyanidins extracted, solvent extraction, and response surface design optimization test impact factor. Conducted a statistical analysis of the test results, and results show that: the optimum extraction conditions for solvent extraction, 64% ethanol concentration, solid-liquid ratio 1:7, temperature 35 ° C is very close to the final experimental values ??with the theoretical prediction value, conditions, wild hair grape seed, skin proanthocyanidins extracted amount 85.54mg / g, 68.75mg / g. Macroporous resin screening to determine the AB-8 macroporous resin as a filler, a recovery of 57% can be obtained under the optimal conditions. In the temperature range of the study, proanthocyanidins AB-8 adsorption resin adsorption isotherm law available the Langmuir and Freundlic adsorption isotherm equation, belonging to the preferential adsorption. Kinetic studies show that the first order kinetic equation and intra-particle diffusion equation AB-8 adsorption resin of proanthocyanidins adsorption process. The thermodynamic studies have shown that the AH GT; 0, indicates that the reaction endotherm, increased temperatures favor the reaction proceeds. The adsorption adsorption reaction free energy change AG lt; 0, show that the macroporous resin adsorption of procyanidins has strong impetus, the reaction can occur spontaneously. Adsorption reaction entropy change AS gt; 0, show that despite the adsorption proanthocyanidins molecular degree of freedom will reduce, but due to the resin phase water relief, eventually leading to an increase in entropy reaction. Proanthocyanidins is a substance has antibacterial activity, antimicrobial test results showed that proanthocyanidins have a strong inhibitory effect on bacteria. With bacteria, proanthocyanidins less significant inhibitory effect on fungi. Several fungi tested strains, the test concentration range no inhibition of Aspergillus fumigatus. Inhibition of proanthocyanidins in different pH range were stable in acidic conditions (pH = 6) can better play its inhibition; higher the temperature within a certain range, the inhibitory effect of proanthocyanidins Vietnam significant; proanthocyanidins solution at the same time, the higher the concentration, the higher the inhibition rate; solution of the same concentration of the longer duration of action, the higher the inhibition rate; antibacterial effect of proanthocyanidins on Gram-positive bacteria than Gram gram-negative bacteria.
