Abstract


Pu ’er tea is a Chinese special tea produced by using tea leaves from Yunnan. Through special fermentation process for the production of tea, it is divided into the un-fermented Pu ’er tea and after-fermented Pu ’er tea. Some researches had shown that there were abundant polyphenol components and many kinds of trace elements and vitamins in Pu ’er tea. which also had function of refreshing, promoting digestion, dispersing cold and detoxification.In order to understand the nature of the problem, first of all, from the historical development of the manufacturing process, Pu ’er tea, pile-fermentation microbial fermentation process of start, explore the main microbial relationship with quality and fermentation process optimization. To find a better solution, there were some traditional fermentation problems:The fermentation cycle was too long. Difficult to control the fermentation process, fermentation health environment does not meet.Then, To establish the hyperlipidemia rat models by feeding high lipid diet. Fed after one week, according to the TC rats were divided into four groups (basic level group, high fat group, cholesterol group, prevention group). Ten rats in each group, and irrigated theabrownin into stomach for every7d,28d,30d to detect rats blood the level of total cholesterol (TCHO), triglyceride (TG), high density liprotein-cholesterol (HDL-C) and low density liprotein-cholesterol (LDL-C), Meanwhile the general conditions and histopathological changes in tissues of liver and kidney were observed to explore the influence of Pu ’er tea on the serum lipid level and the anti-oxidant of the preventive effect in experimental hyperlipidemia rats investigated. Results showed that Pu ’er tea is able to regulate the level of serum lipid effective.Then, chosen five kinds of different storage years Pu ’er tea toxicological effected on Kunming mice. Results showed that Pu ’er tea feature extract oral LD50>10g/kg was non-toxic. The Ames experiment had no statistical significance. Induced CHL cell chromosome aberration rate did not increase was no mutagenic effect.Finally, according to the stored in the bin under the environment of the Pu ’er tea was suitable for growth and mycotoxin detection was easy to mildew, aflatoxin, vomitoxin, fumonisins in60wet warehouse environment in Pu1er tea sample, found itself in Pu’er tea and "bin" environment will not produce these mycotoxins, but in the health environment did not meet the conditions, easy to produce and pollution Pu’ er tea. A large number of long-term drinking can cause liver damage, anorexia, fever and discomfort.
