Effect of the Dietary Vitamin E Supplementation on the Quality of Beef in the Maturation and Storage Days

Abstract


In order to explore the effect of Dietary Vitamin E Supplementation on the quality of yanbian beef during the maturation and storage days, we selected 12 Yanbian yellow cattle (bulls) which were healthy and similar body weight to randomly divide into four treatments, the control group、the trial group 1、the trial group 2 and the trial group 3, three cattle in each group. the control group was separately based on the same basic dietary and the trial group were increased the VE500IU day/head, VE1000IU day/head, VE2000IU day/head separately based on the same basic dietary, feed six months . When the experiment be ended , cow were butchered after 24h empty stomach according to the GB18-393-2001 slaughtering standard. Then we studied the effect of different level concentration dietary vitamin E on production performance and beef quality in yanbian yellow cattle, the results showed that :1、It was significant difference (p<0. 05)for the red colour(a* value) of Yanbian yellow cattle meat with adding the different level of VE to the day food . adding VE(IOOOIU) is the best for feeding six months of cow.2、Adding VE was advanced the content of VE in muscles, the activity of antioxidase (GPX、CAT) (p<0.05) .3、The pH was significantly raised during maturation and storage (p<0.05). which showed VE can raise the pH of beef with feeding the high-level of VE.4、The throating loss , cooking decrement , thaw decrement of Yanbian yellow cattle can be down (p<0.05) , so the liquid-binding power of beef can be raised.5、The surface colour, local style and myolin of beef can be raised, and there was significantly difference between the control group and the trial group (p<0.05) .And the beef is easy to bite, there was significantly difference between the group of 1000IU, 2000IU and the group of control, 500IU (p<0. 05) , but there was no significantly difference between 1000IU and 2000IU.
