Abstract


In this study, the pear slag as raw material , the determination of the basic components of a pear slag ; pear residue soluble chemical method to extract the insoluble dietary fiber , and to optimize the extraction process ; the decolorization treatment with H2O2 dietary fiber ; determined pear dietary fiber physicochemical nature. The conclusions were as follows : (1) pear slag optimal extraction conditions of soluble dietary fiber : NaOH concentration of 3.06% , time 2.38h liquid feed ratio of 9.58:1 , temperature of 89.63 ° C , dietary fiber extraction rate of 14.12% . Factors on the effects of dietary fiber extraction pear residue sequence is as follows : liquid ratio gt ; concentration of NaOH gt ; time gt ; temperature . Test to obtain the best dietary fiber extraction process, the statistical analysis , mathematical model : Y = 1.78 0.5X 1 0.64X 2 0.46X 3 < / sub> 2X 4 0.065X 1 X 2 0.05X 1 X 3 -0.145X 1 X 4 0.1126X 2 X 3 -0.1576 X 2 X 4 0.0926 X 3 X 4 -1.02 X 1 2 -1.22 X 2 2 -0.78 X 3 2 -0.54 X 4 2 (2) experiment pears dietary fiber bleaching process H2O2 concentration of 7% , the processing temperature of 80 ° C , and the processing time of 3 h . The order of the factors affecting pear dietary fiber bleaching effect of H2O2 concentration gt; time gt; temperature. ( 3 ) the impact of temperature and pH on the pear dietary fiber holding capacity, holding oil force expansion force is not significant . Significantly affect the solubility of pear dietary fiber . ( 4 ) pear residue soluble dietary fiber on O 2 < / sub > - · and DPPH · scavenging , while significantly reducing power can be used for the development of pear slag dietary fiber functional food .
