Skatole i.e. 3 - methyl - indole has a very strong fecal odor , is tryptophan metabolites of humans and animals , the human intake of many foods (such as a variety of meat, etc.) itself contains skatole . Skatole on people , animals and the environment, there is a certain hazard role containing skatole or can shift to skatole exogenous food entering the body , skatole inevitably with the animal and the human body 's digestion enzymes occurs role skatole absorbed through the skin in humans and animals from the external environment may also play a role with the body 's digestive enzymes , so we studied skatole part of the nature of several important digestive enzymes . We chose to play an important role in the digestion of starch and sugars substance α-amylase , as well as play a major role in protein digestion process pepsin and trypsin . First skatole activity of alpha - amylase , pepsin and trypsin , and then further studied by UV spectroscopy and fluorescence spectroscopy of skatole these three important digestive enzymes structure . The study found that the skatole to digestive enzymes have a certain degree of inhibition of the three highest inhibition rate on trypsin , pepsin minimum inhibitory rate . When the skatole final concentration of the enzyme ratio of 5 /1 , the skatole this inhibition rate of the three enzymes respectively 32.4% , 28.7% and 26.6 % , respectively . With the increase in the concentration of skatole to three kinds of digestive enzymes with different concentrations of skatole , alpha - amylase in the 265 nm near pepsin in the vicinity of 275 nm and trypsin in 270 nm near UV absorption peak there is a certain degree of rise . We learned through experiments on three skatole digest the intrinsic fluorescence of the enzyme has a strong quenching effect , according to the Stern-Volmer equation skatole on three digestive enzymes quenching of F 0 / F ~ [Q] curve can be drawn
