Abstract


The carotenoids Is an antioxidant food, food rich in carotenoids can prevent physical contact with a destruction of molecules known as free radicals. Related studies have shown that adequate intake from diet carotenoids can reduce the risk of suffering from a variety of chronic diseases such as heart disease and cancer. And eggs is one of mankind's best source of nutrition, eggs contain vitamins, minerals, protein and other nutrients of high biological value. According to different rearing methods, it can be divided into feed eggs and eggs in soil two. Native chicken egg yolk output, deep color, high content of carotenoids in the egg yolk, and welcomed by the people. The purpose of the research is the analysis of the eggs in the soil of nutrients, and study the main components and functions of carotenoids in eggs in soil has an important significance to the development of eggs in soil functional foods. The main findings are as follows: 1. Eggs in soil nutrients analysis papers soil egg yolk nutrients feed Egg yellow nutrients, the results showed that: of soil egg whites in egg weight proportion than feed egg low of 5.82%; 5.91% higher than the proportion of soil egg yolk eggs than feed. 0.03% moisture in the soil eggs, egg white is 3.55% lower than the feed eggs, crude protein content is 0.07% higher than the feed, eggs, crude fat content than feed eggs. The results showed that soil eggs carotenoid extract containing lutein, α-carotene and β-carotene.
