Abstract


Edible film as raw material, the natural edible substances, such as : proteins , polysaccharides , fats , etc. , with extended shelf life , barrier water , gas , grease , the function of protecting the environment , causing the attention and interest of domestic and foreign experts and scholars . Main results are as follows : 1 to soy protein isolate as the raw material by a casting process , deposition temperature , pH value , the added amount of glycerol , the protein solution concentration on the membrane mechanical properties , obtained by optimization experiments deposition best process : temperature of 90 ° C , pH 8.7 , glycerol addition level of 45% . 2 to study the influence of calcium chloride on the membrane properties of soy protein isolate . The results show that : the calcium chloride is added , the tensile strength of the membrane protein membrane increases, the elongation at break is reduced , the water-blocking properties of the protein film is improved , the sensory evaluation is not a significant change . 3 of microwave film role of soy protein isolate , the study found that: after the microwave treatment , the tensile strength of the membrane protein is increased , the elongation at break is reduced , the water-blocking properties of the protein film is improved , but the sensory evaluation is reduced . 4 successfully developed a soy protein isolate , pullulan composite membrane . The study found that: pullulan added reduces the tensile strength of the composite membrane , and to increase the elongation at break , a water-soluble , light-blocking , and sensory evaluation . When the soy protein isolate and pullulan ratio of 6:2 , the heat-sealing strength of the film reaches the maximum , 1.46 ( N/15 mm ) . The pullulan Add not have a significant impact on the of composite membrane digestibility and available lysine content . The thermal degradation temperature of the composite film in the 202 to 219 ° C .
