Abstract


The school is a place of learning and activities of children and adolescents. Youngsters are at the physical and mental development stage, their growth is extremely vulnerable to the impact of the school environment, the education process, construction equipment, dietary nutrition, sports and labor exercise, food hygiene conditions in schools have a direct impact to the teachers and students health plays an important role in maintaining the normal teaching order. As the school cafeteria involves a wide range of objects fixed services, meals on large, prone to collective food poisoning. In recent years occurred in the school when the prevalence of infectious diseases and food poisoning incidents reported have occurred, especially in rural schools. School food security has become the hot issues of common concern to the community. The Midwest rural schools and health facilities than backward, relatively speaking, the cafeteria health and safety risks greater. With the merging townships and towns \Currently, the majority of the school cafeteria health research focused on a certain area in the eastern part of, lack of the rural school canteen Health systemic, comprehensive research, in particular, the investigation of the central and western regions of rural schools is clearly insufficient. The purpose of (1) to understand the hardware facilities of the Midwest rural schools canteens, health management and employees in health status, as well as the school cafeteria \the implementation and the current demand for schools to improve cafeteria, provide the basis for government departments to develop or modify the relevant provisions of the policy; (3) for the school's own improved the cafeteria health management recommendations for the future health supervision department supervision and management of the school cafeteria recommendations. Methods This study used stratified sampling to select six central and western provinces, autonomous regions (Chongqing, Shaanxi, Inner Mongolia, Shanxi, Jilin, Hubei) economic moderately developed counties 72 rural schools (including elementary, middle, high school) as a research scene. A self-designed questionnaire, field observations on the the cafeteria health status of primary and secondary schools, school cafeteria employees, students, teachers conducted a questionnaire survey. After finishing of the data recovery SPSS11.5 software for statistical analysis of the chi-square test, rank sum test. 1 The results show that the schools surveyed, 61 schools have canteens, canteen generally poor health conditions. Different regions, different types of schools with no significant difference compared canteen basic sanitation qualified. Health supervision quantitative score results to compare schools in urban and rural location, there are significant differences between the school cafeteria located in the county health permit review quantitative score better than the township schools; differences in scores between the other classified school cafeteria were not statistically significant. The questionnaire shows the canteen employees lack the necessary knowledge of food hygiene and health knowledge of the law. 4 the school competent leadership and canteen administrator on the cafeteria health management policies and regulations to understand lack of inadequate attention to food hygiene work, school food management system is not sound enough. The mode of operation in the school cafeteria has greatly changed, independent business model from a single school into contracting, logistics socialization multiple modes coexist. More than half of the teachers and students of the school canteen hygiene basically satisfied, but also put forward some of the problems of the existing school cafeteria. Conclusions and Recommendations Midwest rural canteen health status is not optimistic, weak school leadership awareness of food safety, lack of knowledge of the employees in food hygiene, teachers and students are looking forward to improve the school cafeteria. In view of the above conclusions, made the following recommendations: 1. Should be considered to increase investment in central and western rural school funding, special funds for the establishment of a school cafeteria, and gradually rebuilt health is not up to the canteen and to ensure that the new canteen qualified standards. Consider appropriate to reduce the hardware requirements of the central and western rural school cafeteria, to develop in line with the actual rural school cafeteria health norms or standards in accordance with the actual situation of the school. Great importance to the canteen practitioners professional health knowledge, health knowledge of the law, the actual practices and health behaviors develop training to improve their overall quality. 4. Strengthen the cafeteria health management, and related laws and regulations of the school leadership and management training, to enhance their understanding of the importance of school health. School socialization of logistics reform should attach importance to strengthening health supervision of the school cafeteria, it is recommended that the HACCP system health supervision of school cafeteria. 6. Strengthen food, nutrition and health education students, and gradually improve the nutritional status of the rural students.
