Abstract


Sesame is by far the oldest seeds for human use as food resources, also the first to use spices. Sesame is rich in fat and protein, has a high food value. Sesame seeds by containing 45-63% fat, the average of 50%; 19-31% of the protein, with an average of 25%; 20-25% of carbohydrates, including crude fiber; 4% -6% of the ash. Sesame oil containing about 80% of unsaturated fatty acids, wherein, ω-6 polyunsaturated fatty acids accounted for 50% of sesame total unsaturated fatty, and the main component is linoleic acid (C18: 2), and containing a small amount of γ- linolenic acid (C18: 3). γ-linolenic acid, arachidonic acid, adrenal acid, docosapentaenoic acid, etc. on the human body has an important physiological significance of polyunsaturated fatty acids in the synthetic raw materials is linoleic acid, the human body if the lack of linoleic acid can not synthesize these polyunsaturated fatty acids. In addition, the a crowd staple food grain, vulnerable to lack of linoleic acid, and recurrent exogenous linoleic acid is necessary to ensure that human health. Pay close attention at home and abroad in recent years on the ω-6 polyunsaturated fatty acid physiological functions and its medicinal value. Polyunsaturated fatty acids because of their structural characteristics and in the mutual conversion of the metabolism of the human body in different ways, can mainly be divided into ω-3 and ω-6 two series. ω-6 series polyunsaturated fatty acids: octadecadienoic acid (commonly known as linoleic acid) (LA); octadecadienoic acid (commonly known as γ-linolenic acid) (GLA); including arachidonic acid ( commonly known as arachidonic acid) (AA). ω-6 series polyunsaturated fatty acids rich in flora and fauna and microbial resources. This test uses sesame for the extraction of raw materials are unsaturated fatty acids, sesame containing a large amount of linoleic acid. After years of research, the people have a clear understanding of the ω-6 series polyunsaturated fatty acids physiological functions. Ω-6 series polyunsaturated fatty acids of these special structure, given its special physiological functions. Prevention and alleviation of various cardiovascular diseases; regulate cell growth; having high anticancer activity; and having the role of inhibition of gastric ulcers and stomach bleeding; omega-6 polyunsaturated fatty acids as well as enhance insulin, weight loss, as well as enhance immune force and other role. Its application has been expanding, showing good market prospects.
