Comparative Study on Growth Performance and Carcass Meat Quality of Yanbian Yellow Cattle and F1 of Germany×Yanbian Yellow Cattle

Abstract


In order to study the improving extent of F1 of Germany×Yanbian yellow cattle, Four Yanbian yellow cattle(bulls) and four F1 of Germany×Yanbian yellow cattle(bulls) at 21 months old with similar body weight(336.59kg BW) were selected to conduct a experiment with the same test diet and raising condition,the experiment compared their growth performance and carcass meat quality.The results showed that:1.After 120 day-long fattening experiment,the average weight of F1 of Germany×Yanbian yellow cattle was 525.83kg,it was higher than that of Yanbian yellow cattle(P<0.05),The total body weight gain and daily weight gain in F1 of Germany×Yanbian yellow cattle respectively was 183.43 kg,1.53 kg and it was respectively higher than that of Yanbian yellow cattle for 20.94%,21.43%(P<0.05);feed intake per kilogram of concentrate feed,roughage and total feed respectively was 2.55kg,4.47kg and 7.02kg,it was respectively reduced 18.79%,15.02%,and 16.43%than that of Yanbian yellow cattle(P<0.05).The above shows that the growth and feed conversion rate of F1 of Germany×Yanbian yellow cattle respectively is rapider and higher than Yanbian yellow cattle.2.The result of body size measurement shows that:the body length,chest depth, hip bone wide and sciatic wide of F1 of Germany×Yanbian yellow cattle respectively was 150.63cm,74.33cm,44.83cm,53.67cm,and significantly higher than that of Yanbian yellow cattle(P<0.05);other indexes had a improving tendency except chest width,but difference was not notable(P>0.05).3.The digestibility of dry matter,crude protein,crude fat,crude fiber,ash,NFE of F1 of Germany×Yanbian yellow cattle in the dietary respectively was 72.33%,69.23%,67.57%,70.04%,45.65%,73.66%,it was no significant differences with Yanbian yellow cattle(P>0.05).4.The total albumen,albumin,globulin,glucose,urea nitrogen,calcium,inorganic phosphorus,triglyceride,cholesterol,GPT,GOT content of serum in F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle were no significant difference(P>0.05),and within the normal range.5.The carcass weight and meat weight of F1 of Germany×Yanbian yellow cattle respectively was 285.45kg,237.29kg,it was respectively improved 18.97%,22.36% than that of Yanbian yellow cattle(P<0.05).The dressing percentage and net beef percentage of F1 of Germany×Yanbian yellow cattle respectively was 56.34%,46.83%,it was respectively improved 8.16%,11.26%than that of Yanbian yellow Cattle(P<0.05).for the radio of bone to flesh and eye muscle area,there was a improving tendency,but the difference was not significant(P>0.05).The above shows that the meat production and economic performance of F1 of Germany×Yanbian yellow cattle is higher than Yanbian yellow cattle.6.The beef color,fat color of F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle were both better and within the normal range,marbling was less,it may be related to smaller-month-old of the test cattle,the grade evaluation of the beef color,the fat color,marbling of F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle were no significant differences(P>0.05).for the chemical composition of loin muscle, F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle have no significantly differences(P>0.05).7.The pH,tenderness,water lose rate,cooked meat ratio etc.physicochemical properties of loin muscle in F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle were no significant differences(P>0.05);The amino acid content of loin muscle in F1 of Germany×Yanbian yellow cattle and Yanbian yellow cattle were no significant differences(P>0.05),of which lysine and glutamate had a high level;the fatty acid content of loin muscle in F1 of Germany×Yanbian yellow cattle and Yanbian cattle were no significant differences(P>0.05),of which unsaturated fatty acids and oleic acid had a high level.The above shows that F1 of Germany×Yanbian yellow cattle don’t change Meat flavor of Yanbian yellow cattle and maintain the original characteristics.
