Abstract


Stability studies using the Arrhenius equation , the study of the chemical dynamics of infant formula . Methionine and tryptophan is the most unstable of the essential amino acids in infant milk powder and whole milk powder . Their storage period at 2500h-3000h . The activation energy for a variety of amino acids are not identical , the largest of the amino acid activation energy for the leucine in the whole milk powder , of 6.2438 E 6 J / mol , and the minimum activation energy of whole milk powder in the methionine , and its activation energy is 4.4664 E 5 J / mol. General chemical reaction activation energy seen by the data in 42kJ/mo-420kJ/mol . The order of magnitude by the amino acid activation energy can be drawn milk amino acid in the degradation reaction is not a simple zero - stage of the reaction , or a reaction , amino acid degradation reactions is a complex process , its mechanism for further study .
